  • 1/2 tsp salt
  • 1 large egg, room temperature
  • 2 tbsp unsalted butter, melted
  • 1/2 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • For the Coating: 1/4 cup unsalted butter (melted), 1/2 cup granulated sugar, 1 tbsp ground cinnamon

Instructions

  1. Step 1: Reduce the Apple Cider – In a small saucepan over medium-high heat, simmer the apple cider until it has reduced to exactly 1/2 cup. This usually takes about 10 to 15 minutes. Set it aside to cool slightly before using.
  2. Step 2: Prepare the Oven and Pan – Preheat your oven to 350°F (175°C). Lightly grease two standard 6-cavity donut pans with non-stick cooking spray or a small amount of melted butter.
  3. Step 3: Whisk the Dry Ingredients – In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, 1 1/2 teaspoons of cinnamon, nutmeg, and salt until well combined.
  4. Step 4: Combine the Wet Ingredients – In a separate medium bowl, whisk the egg, brown sugar, and granulated sugar together. Add the melted butter, buttermilk, vanilla extract, and the cooled, reduced apple cider. Stir until smooth.
  5. Step 5: Mix the Batter – Pour the wet ingredients into the dry ingredients. Use a spatula to fold the mixture together until just combined. Be careful not to overmix, as this can make the donuts tough.
  6. Step 6: Fill the Donut Pans – Spoon the batter into the prepared donut pans, filling each cavity about 3/4 full. For a cleaner look, you can transfer the batter to a piping bag or a large plastic bag with the corner snipped off.
  7. Step 7: Bake to Perfection – Bake for 9 to 11 minutes, or until the donuts spring back when lightly touched and a toothpick comes out clean. Let them cool in the pan for about 5 minutes.
  8. Step 8: Apply the Cinnamon Sugar Coating – While the donuts are still warm, melt the coating butter in a small bowl. In another bowl, mix the sugar and cinnamon. Dip each donut into the butter, then toss it in the cinnamon sugar until fully coated.
