  • 1 cup apple cider (reduced to 1/2 cup)
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup whole milk, room temperature
  • 1 teaspoon vanilla extract
  • For the Coating: 1/2 cup granulated sugar, 1 tablespoon cinnamon, and 4 tablespoons melted butter

Instructions

  1. In a small saucepan over medium-high heat, simmer the 1 cup of apple cider until it has reduced to exactly 1/2 cup. This should take about 10 to 15 minutes. Let it cool completely before using in the batter.
  2. Preheat your oven to 350°F (175°C). Generously grease two 6-cavity donut pans with non-stick cooking spray or a light coating of butter to ensure the donuts release easily after baking.
  3. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Make sure there are no large lumps of flour or spices.
  4. In a medium bowl, whisk together the melted butter, egg, brown sugar, granulated sugar, milk, vanilla extract, and the cooled, reduced apple cider until the mixture is smooth and well combined.
  5. Pour the wet ingredients into the dry ingredients. Use a spatula to fold them together gently until just combined. Be careful not to overmix, as this can make the donuts tough.
  6. Spoon the batter into a large piping bag or a plastic zip-top bag with the corner snipped off. Pipe the batter into the donut cavities, filling them about 2/3 to 3/4 of the way full.
  7. Bake for 10 to 12 minutes, or until a toothpick inserted into the thickest part of a donut comes out clean. Let them cool in the pan for 5 minutes before transferring them to a wire rack.
  8. While the donuts are still warm, melt the remaining butter in a small bowl. In another bowl, mix the sugar and cinnamon. Brush each donut lightly with melted butter, then toss it in the cinnamon-sugar mixture until fully coated.
