Ingredients
Scale
- 1/4 cup chia seeds (black or white)
- 1 cup milk of choice (almond, coconut, soy, or dairy milk)
- 1 tablespoon maple syrup or honey (optional)
- 1/2 teaspoon vanilla extract
- A small pinch of sea salt
Instructions
- In a medium-sized mixing bowl or a wide-mouth glass jar, add the chia seeds, your chosen milk, sweetener, vanilla extract, and a pinch of salt. Using a whisk or a fork, stir the mixture vigorously to ensure the seeds are well-distributed and not clumped together at the bottom.
- Let the mixture sit at room temperature for about 5 to 10 minutes. After this brief rest, give it another thorough stir. This step is crucial because it prevents the chia seeds from settling at the bottom and forming a solid block, ensuring a uniform and creamy texture.
- Cover the bowl or seal the jar with a tight-fitting lid. Place it in the refrigerator for at least 2 hours. For the best results and the thickest consistency, leave it to set overnight. The seeds will absorb the liquid and transform the mixture into a thick pudding.
- Once the pudding has set, take it out of the fridge and give it one last stir. If the pudding seems too thick, you can splash in a little extra milk to thin it out to your liking. Add your favorite toppings and enjoy immediately.
