Instructions
- In a large bowl, sift together the all-purpose flour, baking powder, salt, and sugar. Sifting helps remove any lumps and ensures the baking powder is evenly distributed for a better rise.
- In a separate small bowl or measuring cup, whisk the egg and milk together. Stir in the melted butter and vanilla extract. Ensure the butter has cooled slightly so it does not cook the egg.
- Make a well in the center of the dry ingredients and pour in the milk mixture. Use a whisk or spatula to combine until just moistened. It is important to leave some lumps in the batter; over-mixing will make the pancakes tough.
- Heat a lightly oiled griddle or non-stick frying pan over medium-high heat. You can test the heat by dropping a tiny bit of water on the surface; if it sizzles and dances, the pan is ready.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until bubbles form on the surface and the edges look dry, then flip and cook until browned on the other side. This usually takes about 2-3 minutes per side.
