Ingredients
Scale
- 1/2 cup apple juice or apple cider
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 shots of espresso (or 1/2 cup very strong brewed coffee)
- 1 cup oat milk (extra creamy works best)
- 1 cup ice cubes
- Apple slices or a dash of cinnamon for garnish (optional)
Instructions
- In a small saucepan over medium heat, combine the apple juice, brown sugar, cinnamon, and nutmeg. Stir the mixture constantly until the sugar has completely dissolved. Let it simmer for about 5 to 7 minutes until it thickens slightly into a syrup consistency. Remove from heat and let it cool before using.
- Brew two shots of your favorite espresso. If you do not have an espresso machine, brew 1/2 cup of very strong coffee using a French press or a moka pot. Let the coffee cool for a few minutes so it does not immediately melt all the ice in your glass.
- Fill a tall glass with one cup of ice cubes. Drizzle about 2 tablespoons of your homemade apple brown sugar syrup over the ice. Feel free to add more or less depending on how sweet you like your coffee.
- Pour the oat milk into the glass over the ice and syrup. Leave about an inch of space at the top of the glass for the coffee layer. Give it a very gentle stir if you want the syrup to begin incorporating with the milk.
- Slowly pour the brewed espresso or strong coffee over the top of the oat milk. For the best layered effect, pour the coffee over the back of a spoon. This helps the coffee sit on top of the milk rather than mixing instantly.
- Finish the drink by adding a sprinkle of cinnamon or a few thin slices of fresh apple on top. Serve immediately with a straw and enjoy the flavors of fall.
