  • 2 cups old-fashioned rolled oats
  • 1 cup whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/3 cup honey or pure maple syrup
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil or butter
  • 2 cups apples, peeled and finely diced (about 2 medium apples)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving a little overhang on the sides for easy removal, or grease it lightly with cooking spray.
  2. In a large mixing bowl, combine the rolled oats, whole wheat flour, ground cinnamon, baking powder, and salt. Stir everything together until the cinnamon is evenly distributed throughout the oats.
  3. In a medium bowl, whisk together the unsweetened applesauce, honey, beaten egg, vanilla extract, and melted coconut oil until the mixture is smooth and well-combined.
  4. Pour the wet ingredients into the dry ingredients. Use a spatula to stir until just combined. Gently fold in the diced apples until they are evenly spread through the thick batter.
  5. Transfer the mixture into your prepared baking pan. Use the back of a spoon or a spatula to press the batter down firmly and evenly. Bake for 30 to 35 minutes, or until the edges are golden brown and the center is set.
  6. Remove the pan from the oven and let it cool completely on a wire rack. This is a crucial step to ensure the bars hold their shape. Once cooled, lift the parchment paper out and slice into 12 rectangular bars.
