- 1 ½ cups all-purpose flour

- ½ cup vegetable oil (or melted coconut oil)
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- 1 ½ cups grated zucchini (do not peel)
- ¾ cup semi-sweet chocolate chips (plus extra for topping)
Instructions
- Step 1: Preheat and Prepare. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick cooking spray. For easy removal, you can also line the bottom with a strip of parchment paper, leaving an overhang on the sides.
- Step 2: Grate the Zucchini. Using the medium holes of a box grater, shred the zucchini. There is no need to peel the skin, as it adds beautiful flecks of color and softens during baking. If the zucchini is exceptionally watery, lightly pat it with a paper towel, but do not squeeze it completely dry.
- Step 3: Whisk Dry Ingredients. In a medium-sized mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, and salt. Ensuring these are well-combined helps the bread rise evenly and prevents any clumps of salt or soda.
- Step 4: Mix Wet Ingredients. In a large bowl, whisk together the vegetable oil, granulated sugar, brown sugar, egg, and vanilla extract until the mixture is smooth and slightly pale. Stir in the grated zucchini until evenly distributed.
- Step 5: Combine the Batter. Gradually add the dry ingredients to the wet ingredients. Use a spatula to fold the mixture together just until no streaks of flour remain. Be careful not to overmix, as this can make the bread tough. Gently fold in the chocolate chips.
- Step 6: Bake the Loaf. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle a few extra chocolate chips over the surface if desired. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Step 7: Cool and Serve. Let the bread cool in the pan for about 10 minutes. This allows the structure to set. Then, transfer the loaf to a wire rack to cool completely before slicing. This wait is difficult but necessary for the best texture!
