  • 1 teaspoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 2 ripe peaches, diced
  • 1/2 cup Greek yogurt
  • 1/4 cup granola

Instructions

  1. In a medium bowl or glass jar, combine the chia seeds, almond milk, maple syrup, and vanilla extract. Whisk or stir vigorously for about two minutes to ensure the seeds are well distributed and don’t clump together at the bottom.
  2. Cover the mixture and place it in the refrigerator. Let it sit for at least 4 hours, though leaving it overnight is best for the creamiest texture. Give it one more quick stir after the first 30 minutes if possible.
  3. Wash your peaches thoroughly. Dice them into bite-sized pieces. If the skins are fuzzy or tough, you can peel them first, but leaving the skin on adds extra fiber and a beautiful pop of color to your parfait.
  4. Take two serving glasses. Start with a layer of the set chia pudding at the bottom. Follow with a layer of Greek yogurt, then a generous handful of diced peaches. Repeat the layers until the glasses are full.
  5. Top each parfait with the granola just before serving. This ensures the granola stays crunchy and provides a perfect textural contrast to the soft pudding and yogurt.
