Instructions
- Step 1: Preheat the Waffle Iron: Turn on your waffle iron and set it to a medium-high heat setting. Lightly coat the plates with non-stick cooking spray or a small amount of melted butter to ensure the waffles release easily once cooked.
- Step 2: Mix the Dry Ingredients: In a medium-sized mixing bowl, whisk together the oat flour, protein powder, baking powder, cinnamon, and salt. Make sure there are no large clumps of protein powder so the batter remains smooth.
- Step 3: Combine the Wet Ingredients: In a separate smaller bowl, whisk the egg, Greek yogurt, almond milk, and vanilla extract until the mixture is well combined and creamy.
- Step 4: Create the Waffle Batter: Pour the wet ingredients into the dry ingredient bowl. Gently stir with a spatula or whisk until just combined. Be careful not to overmix, as this can make the waffles tough. Let the batter sit for 2 to 3 minutes to thicken slightly.
- Step 5: Cook the Waffles: Pour about 1/2 cup of batter onto the center of the preheated waffle iron. Close the lid and cook for 3 to 5 minutes, or until the waffle is golden brown and crisp. Repeat with the remaining batter.
