  • 1 egg yolk
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Step 1: Preheat and Prepare. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease them lightly with non-stick cooking spray to ensure the muffins release easily after baking.
  2. Step 2: Mix the Dry Ingredients. In a large mixing bowl, whisk together the all-purpose flour, 1 cup of granulated sugar, brown sugar, baking soda, salt, and pumpkin pie spice. Make sure there are no large lumps of brown sugar left in the mix.
  3. Step 3: Combine the Wet Ingredients. In a separate medium bowl, whisk together the two eggs, pumpkin puree, vegetable oil, and 1 tablespoon of vanilla extract until the mixture is smooth and well combined.
  4. Step 4: Create the Muffin Batter. Gently pour the wet ingredients into the dry ingredients. Use a spatula to fold the mixture together just until combined. Be careful not to overmix, as this can make the muffins tough.
  5. Step 5: Prepare the Cream Cheese Filling. In another bowl, beat the softened cream cheese, ¼ cup of sugar, egg yolk, and 1 teaspoon of vanilla extract together until the filling is creamy and smooth.
  6. Step 6: Assemble the Muffins. Fill each muffin cup about two-thirds full with the pumpkin batter. Spoon about one tablespoon of the cream cheese mixture into the center of each muffin. You can use a toothpick to gently swirl the cream cheese into the batter for a marbled look.
