  • 1 ½ cups Granny Smith apples, peeled and finely diced (about 2 medium apples)

Instructions

  1. Step 1: Brown the Butter: Place the butter in a light-colored saucepan over medium heat. Melt the butter, then continue to cook, whisking constantly. The butter will foam up and eventually you will see little brown bits at the bottom. Once it smells nutty and looks golden-brown, remove it from the heat immediately and pour it into a large mixing bowl to cool for 10 minutes.
  2. Step 2: Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides so you can easily lift the blondies out later. Lightly grease the parchment with cooking spray or a little butter.
  3. Step 3: Combine Wet Ingredients: Add the brown sugar to the cooled brown butter and whisk until well combined. Add the egg and vanilla extract, whisking vigorously for about a minute until the mixture looks smooth and glossy. This helps create that iconic crinkle top.
  4. Step 4: Mix in Dry Ingredients: In a separate bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and salt. Gently fold the dry ingredients into the butter mixture using a spatula. Stop mixing as soon as no more streaks of flour remain to avoid a tough blondie.
  5. Step 5: Fold in the Apples: Gently fold the diced apples into the thick batter until they are evenly distributed. The batter will be quite heavy and thick, which is exactly what you want for a fudgy texture.
  6. Step 6: Bake and Cool: Spread the batter into the prepared pan, smoothing the top with your spatula. Bake for 30 to 35 minutes, or until the edges are golden and a toothpick inserted into the center comes out with just a few moist crumbs.
