  1. Step 1: Preheat and Prepare: Preheat your oven to 400°F (200°C). Roll out one of the chilled pie crusts and fit it into a 9-inch pie plate. Trim the edges, leaving a small overhang, and place it back in the refrigerator while you prepare the filling.
  2. Step 2: Mix the Cherry Filling: In a large mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and almond extract. Toss everything together gently until the cherries are evenly coated and the cornstarch has dissolved into the juices.
