  • 2 (29 oz) cans sliced peaches in heavy syrup
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup (1 stick) salted butter, thinly sliced into squares
  • 1 teaspoon ground cinnamon
  • 1/4 cup light brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with non-stick cooking spray or a little bit of butter to ensure the cobbler doesn’t stick to the sides.
  2. Open both cans of peaches. Pour the first can (including the syrup) directly into the bottom of the prepared baking dish. Drain about half of the syrup from the second can, then pour the remaining peaches and the rest of that syrup into the dish. Spread them out into an even layer.
  3. Sprinkle the ground cinnamon and light brown sugar evenly over the top of the peaches. This helps create a rich, caramelized flavor that mimics a traditional homemade peach cobbler filling.
  4. Pour the dry yellow cake mix evenly over the peach layer. Use a spatula or the back of a spoon to spread it out so it covers all the fruit. Important: Do not stir the mixture! You want the cake mix to sit right on top.
  5. Place the thin slices of butter in a single layer over the top of the dry cake mix. Try to cover as much of the surface as possible. As the cake bakes, the butter will melt into the mix to create a crisp, golden crust.
  6. Place the dish in the oven and bake for 45 to 50 minutes. The cobbler is done when the fruit filling is bubbling around the edges and the cake topping is a beautiful golden brown color.
