  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup water or orange juice
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons pure maple syrup (for glaze)
  • 1 tablespoon milk or cream (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick cooking spray. For easy removal, you can also line the bottom with parchment paper, leaving a slight overhang on the sides.
  2. In a medium-sized mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Ensure there are no large clumps of spices or leavening agents.
  3. In a separate large bowl, combine the pumpkin puree, vegetable oil, eggs, and water. Whisk these ingredients together until the mixture is completely smooth and the eggs are fully incorporated.
  4. Slowly add the dry ingredient mixture into the wet ingredients. Use a spatula or wooden spoon to stir until just combined. Be careful not to overmix, as this can make the bread tough; stop as soon as no streaks of flour remain.
  5. Pour the batter into your prepared loaf pan and smooth the top with a spatula. Place it in the center of the oven and bake for 55 to 65 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  6. While the bread is cooling in the pan, whisk together the powdered sugar, pure maple syrup, and milk in a small bowl. The glaze should be thick but pourable. If it is too thick, add a few more drops of milk.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack. Once the bread is mostly cool, drizzle the maple glaze generously over the top, letting it drip down the sides. Let the glaze set before slicing.
