Ingredients
Scale
- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup water or orange juice
- 1 cup powdered sugar (for glaze)
- 2 tablespoons pure maple syrup (for glaze)
- 1 tablespoon milk or cream (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick cooking spray. For easy removal, you can also line the bottom with parchment paper, leaving a slight overhang on the sides.
- In a medium-sized mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Ensure there are no large clumps of spices or leavening agents.
- In a separate large bowl, combine the pumpkin puree, vegetable oil, eggs, and water. Whisk these ingredients together until the mixture is completely smooth and the eggs are fully incorporated.
- Slowly add the dry ingredient mixture into the wet ingredients. Use a spatula or wooden spoon to stir until just combined. Be careful not to overmix, as this can make the bread tough; stop as soon as no streaks of flour remain.
- Pour the batter into your prepared loaf pan and smooth the top with a spatula. Place it in the center of the oven and bake for 55 to 65 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- While the bread is cooling in the pan, whisk together the powdered sugar, pure maple syrup, and milk in a small bowl. The glaze should be thick but pourable. If it is too thick, add a few more drops of milk.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack. Once the bread is mostly cool, drizzle the maple glaze generously over the top, letting it drip down the sides. Let the glaze set before slicing.
