  • 2/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Place your sliced strawberries in a medium bowl and sprinkle them with 1/4 cup of granulated sugar. Stir them gently to coat. Let them sit at room temperature for at least 30 minutes. This process, called maceration, draws out the juices to create a sweet syrup.
  2. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat to prevent the biscuits from sticking and to ensure even browning.
  3. In a large mixing bowl, whisk together the flour, the remaining 1/4 cup of granulated sugar, the baking powder, and the salt. Make sure there are no large clumps so the biscuits rise evenly.
  4. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or two knives to work the butter into the flour until the mixture looks like coarse crumbs with some pea-sized pieces of butter still visible. This is the secret to flaky layers.
  5. Pour in the milk and vanilla extract. Stir gently with a fork just until the dough starts to come together. Be careful not to overmix, as this will make the biscuits tough instead of tender.
  6. Drop large spoonfuls of dough onto the prepared baking sheet, making about 6 large mounds. Bake for 12 to 15 minutes, or until the tops are a beautiful golden brown. Transfer them to a wire rack to cool slightly.
  7. In a chilled bowl, beat the heavy whipping cream and powdered sugar together using a hand mixer or whisk. Continue until stiff peaks form, meaning the cream holds its shape when you lift the beaters.
  8. Slice the warm biscuits in half horizontally. Place the bottom half on a plate, top with a generous spoonful of strawberries and syrup, add a dollop of whipped cream, and place the other biscuit half on top.
