  • 6 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 3 large carrots, peeled and sliced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, melt 1 tablespoon of butter over medium heat. Add the diced onion, carrots, and celery. Cook for about 5 to 7 minutes until the vegetables begin to soften. Stir in the minced garlic and cook for another minute until fragrant.
  2. Pour in the chicken broth and add the uncooked wild rice blend, dried thyme, and dried rosemary. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 35 to 40 minutes, or until the rice is tender and some of the grains have popped open.
  3. While the rice is simmering, add the diced chicken to the pot. The chicken will poach gently in the broth as the rice finishes cooking. This keeps the meat tender and juicy. Ensure the chicken is cooked through and reaches an internal temperature of 165°F.
  4. In a separate small saucepan, melt the remaining 3 tablespoons of butter over medium heat. Whisk in the flour and cook for 1-2 minutes to create a light roux. Gradually whisk in the heavy cream until the mixture is smooth and begins to thicken. This step ensures your soup is creamy without being lumpy.
  5. Slowly pour the cream mixture into the main soup pot, stirring constantly to incorporate. Allow the soup to simmer for an additional 5 minutes. The soup will thicken beautifully as it melds with the cream base.
  6. Taste the soup and add salt and black pepper as needed. Garnish with fresh parsley before serving. If the soup is too thick, you can add an extra splash of broth or water to reach your desired consistency.
