- 1.5 lbs chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice (optional)
Instructions
- Pat the chicken cubes dry with a paper towel. In a medium bowl, toss the chicken with salt, pepper, and paprika until every piece is evenly coated. Drying the chicken is the secret to getting a good sear.
- Place a large skillet over medium-high heat. Add the olive oil and 1 tablespoon of butter. Once the butter is melted and bubbling, add the chicken in a single layer. Do not overcrowd the pan; work in batches if necessary. Cook for 3-4 minutes until golden brown, then flip and cook for another 3 minutes until cooked through.
- Reduce the heat to medium. Add the remaining 3 tablespoons of butter to the skillet along with the minced garlic. Stir constantly for about 1 minute until the garlic is fragrant and the butter is slightly browned. Be careful not to burn the garlic.
- Toss the chicken bites in the garlic butter sauce until they are fully glazed. Stir in the lemon juice and fresh parsley. Remove from the heat immediately and serve while hot.
