  • 1.5 lbs Sirloin steak or Ribeye, cut into 1-inch cubes
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 4 cloves Garlic, minced
  • 1 teaspoon Salt (or to taste)
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Dried thyme (optional)
  • 2 tablespoons Fresh parsley, finely chopped for garnish

Instructions

  1. Step 1: Prep and Season the Steak. Pat the steak cubes dry with a paper towel. This is a crucial step to ensure a good sear. Place the cubes in a bowl and toss them with olive oil, salt, and black pepper until evenly coated.
  2. Step 2: Sear the Steak Bites. Heat a large cast-iron skillet or heavy frying pan over high heat. Once the pan is smoking hot, add the steak bites in a single layer. Do not crowd the pan; work in batches if necessary. Let them sear undisturbed for about 2 minutes to develop a brown crust, then toss and cook for another 1-2 minutes.
  3. Step 3: Create the Garlic Butter Sauce. Reduce the heat to medium. Add the butter, minced garlic, and dried thyme to the pan. Stir constantly for about 1 minute, allowing the butter to melt and the garlic to become fragrant without burning. Toss the steak bites continuously so they are fully glazed in the garlic butter.
  4. Step 4: Garnish and Serve. Remove the skillet from the heat immediately to prevent the steak from overcooking. Sprinkle the fresh chopped parsley over the top and serve warm.
