- 1.5 lbs Sirloin steak or Ribeye, cut into 1-inch cubes
- 1 tablespoon olive oil or avocado oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon onion powder
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Start by patting your steak cubes dry with a paper towel. This is a crucial step to ensure a good sear. Place the meat in a bowl and toss with salt, black pepper, and onion powder until every piece is evenly coated.
- Place a large cast-iron skillet or heavy-bottomed pan over medium-high to high heat. Add the olive oil and wait until it is shimmering and just beginning to smoke slightly.
- Add the steak cubes to the hot pan in a single layer. Do not crowd the pan; work in batches if necessary. Let the meat sear undisturbed for about 2 minutes to develop a brown crust, then flip and cook for another 2 minutes.
- Reduce the heat to medium. Add the butter and the minced garlic to the pan. As the butter melts, use a spoon to baste the steak bites with the garlic butter for about 1 to 2 minutes until the garlic is fragrant and the butter is slightly browned.
- Remove the pan from the heat immediately so the garlic doesn’t burn. Sprinkle the fresh parsley over the steak bites and toss one last time. Serve immediately while hot.
