- 1.5 lbs Sirloin steak or Ribeye, cut into 1-inch cubes
- 2 tablespoons Olive oil
- 4 tablespoons Unsalted butter
- 4 cloves Garlic, minced
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 tablespoon Fresh parsley, chopped
- 1/2 teaspoon Red pepper flakes (optional)
Instructions
- Pat the steak cubes dry with a paper towel to remove excess moisture. This is crucial for getting a good sear. Season the beef generously with salt and black pepper in a medium bowl, tossing to ensure every piece is coated.
- Heat the olive oil in a large skillet over medium-high heat until it is shimmering. Add the steak bites in a single layer, making sure not to crowd the pan. Sear for 2 to 3 minutes without moving them to develop a crust, then flip and cook for another 2 minutes until browned on all sides.
- Reduce the heat to medium. Add the butter to the skillet along with the minced garlic and optional red pepper flakes. Use a spoon to baste the steak bites with the melting garlic butter for about 1 to 2 minutes, ensuring the garlic becomes fragrant but does not burn.
- Remove the skillet from the heat immediately. Sprinkle the fresh chopped parsley over the steak bites and toss one last time to coat everything in the herb-infused butter. Serve warm while the butter is still silky.
