- 1.5 lbs Sirloin steak or Ribeye, cut into 1-inch cubes
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme or rosemary
- Fresh parsley, chopped (for garnish)
Instructions
- Step 1: Prepare the Meat – Pat the steak cubes dry with paper towels. This is a crucial step to ensure a good sear. Place the cubes in a bowl and toss them with olive oil, salt, black pepper, and dried herbs until every piece is evenly coated.
- Step 2: Sear the Steak – Heat a large cast-iron skillet or heavy frying pan over medium-high heat until it is smoking hot. Add the steak bites in a single layer, making sure not to crowd the pan. Work in batches if necessary. Sear the meat for 2 minutes without moving them to develop a crust, then flip and cook for another 1-2 minutes until browned on all sides.
- Step 3: Add Garlic Butter – Reduce the heat to medium. Add the butter and minced garlic to the skillet. As the butter melts, toss the steak bites continuously for about 1-2 minutes so they are completely coated in the garlic butter. Be careful not to let the garlic burn.
- Step 4: Garnish and Serve – Remove the pan from the heat immediately once the garlic is fragrant and the butter is foamy. Sprinkle fresh chopped parsley over the top and serve while hot.
