  • 1.5 lbs chicken breasts or thighs, cut into bite-sized pieces
  • 1.5 cups long-grain white rice (rinsed)
  • 3 cups chicken broth (low sodium preferred)
  • 4 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream or whole milk (optional for extra creaminess)
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by patting your chicken pieces dry with a paper towel. Season them generously with salt, black pepper, and half of the dried oregano. This ensures the flavor is locked into the meat from the very beginning.
  2. Heat the olive oil and one tablespoon of butter in a large skillet or Dutch oven over medium-high heat. Add the chicken pieces in a single layer. Brown the chicken for about 3-4 minutes per side until golden. Remove the chicken from the pot and set it aside on a plate; it does not need to be cooked through yet.
  3. In the same pot, add the remaining tablespoon of butter. Stir in the minced garlic and cook for about 1 minute until fragrant. Add the rinsed rice to the pot and stir for 2 minutes. Toasting the rice slightly helps it maintain its texture and adds a nutty flavor.
  4. Pour in the chicken broth and the remaining oregano, scraping the bottom of the pot to release any browned bits (fond). Bring the liquid to a boil. Once boiling, turn the heat down to low, return the chicken (and any juices) to the pot, and cover with a tight-fitting lid.
  5. Let everything simmer for 15 to 18 minutes, or until the rice is tender and the liquid is absorbed. Avoid lifting the lid during this time so the steam stays trapped inside to cook the rice evenly.
  6. Remove the pot from the heat. Stir in the heavy cream (if using) and the grated Parmesan cheese. The cheese will melt into the residual moisture, creating a creamy sauce. Let it sit covered for 5 minutes before fluffing the rice with a fork. Garnish with fresh parsley and serve hot.
