  • 2 large flour tortillas (burrito size)
  • 4 oz cream cheese, softened
  • 1 tablespoon Dijon mustard or mayonnaise
  • 6 slices deli-style ham
  • 4 slices cheddar or Swiss cheese
  • 1 cup fresh baby spinach or shredded romaine lettuce

Instructions

  1. In a small bowl, stir together the softened cream cheese and mustard until smooth. Lay your tortillas flat on a clean cutting board and spread an even layer of the mixture over the entire surface of each tortilla, reaching almost to the edges.
  2. Place the slices of deli ham over the cream cheese layer, slightly overlapping them to cover the center. Arrange the cheese slices on top of the ham. Spread the spinach or lettuce across the middle of the tortilla.
  3. Starting from the bottom edge, roll the tortilla up as tightly as possible toward the top. The cream cheese mixture acts as a “glue” to keep the roll from falling apart. Press down gently on the seam once finished.
  4. Using a sharp serrated knife, trim the uneven ends of the rolls. Slice each log into 1-inch thick rounds. If you are packing these for later, place them snugly in a container to help them maintain their circular shape.
