- 1 large head of cauliflower, cut into bite-sized florets
- 1/2 cup buffalo sauce (ensure it is sugar-free/Keto-friendly)
- 2 tablespoons unsalted butter, melted
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup almond flour for extra texture
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat to prevent sticking. Cut your cauliflower into uniform bite-sized florets so they cook evenly.
- In a large mixing bowl, toss the cauliflower florets with the garlic powder, onion powder, salt, pepper, and almond flour (if using). Ensure every piece is lightly coated with the dry seasonings.
- Spread the seasoned cauliflower florets in a single layer on the prepared baking sheet. Bake for 15 to 20 minutes, or until the cauliflower starts to become tender and the edges begin to brown slightly.
- While the cauliflower roasts, whisk together the melted butter and buffalo sauce in a small bowl. Remove the tray from the oven and carefully toss the par-baked florets in the sauce mixture until fully submerged and coated.
- Return the saucy cauliflower to the baking sheet and bake for an additional 8 to 10 minutes. For extra crispiness, you can turn on the broiler for the last 2 minutes, watching closely to ensure they do not burn.
