- 1 large English cucumber (seedless)
- 1 ripe avocado, pitted and peeled
- 4 oz cream cheese, softened
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 tablespoon Everything Bagel seasoning
- Optional: 2 oz smoked salmon or thin deli turkey slices
Instructions
- Wash the English cucumber thoroughly. Using a Y-peeler or a mandoline, slice the cucumber lengthwise into very thin, wide ribbons. Stop once you reach the watery seeds in the middle, flip the cucumber, and repeat on the other side. Lay the ribbons on a paper towel and pat them dry to remove excess moisture.
- In a small mixing bowl, combine the ripe avocado, softened cream cheese, lemon juice, garlic powder, salt, and pepper. Use a fork to mash the ingredients together until the mixture is smooth and well-combined. The lemon juice adds flavor and prevents the avocado from turning brown.
- Lay one cucumber ribbon flat on a clean cutting board. Spread a thin, even layer of the avocado mixture along the entire length of the ribbon. If you are using protein like smoked salmon or turkey, place a small piece at one end of the ribbon.
- Starting from the end with the extra protein (or just one end of the ribbon), carefully roll the cucumber into a tight spiral. Place the roll seam-side down on a serving platter. The cream cheese filling should act as a natural glue to keep the roll together.
- Once all rolls are assembled, sprinkle the tops generously with Everything Bagel seasoning. This adds a nice crunch and a pop of flavor. Serve immediately while fresh and crisp.
