- Step 1: Prepare the Peaches. Start by washing your peaches thoroughly. Remove the pits and dice the fruit into small, uniform cubes. You can leave the skin on for extra color and nutrition, or peel them if you prefer a smoother texture.
- Step 2: Chop the Vegetables and Herbs. Finely dice the red onion and mince the jalapeño. If you want a milder salsa, be sure to remove all the seeds and white ribs from the jalapeño. Roughly chop the fresh cilantro leaves.
- Step 3: Mix the Ingredients. In a medium-sized mixing bowl, combine the diced peaches, red onion, jalapeño, and cilantro. Gently toss them together so the fruit stays intact and doesn’t get mushy.
- Step 4: Season and Dress. Drizzle the fresh lime juice and honey over the mixture. Sprinkle in the salt and black pepper. Stir everything once more to ensure the flavors are evenly distributed.
- Step 5: Chill and Marinate. For the best flavor, let the salsa sit in the refrigerator for at least 30 minutes before serving. This allows the juices to mingle and the onions to soften slightly.
