  • 3 cups fresh pineapple, finely diced
  • 1 red bell pepper, finely chopped
  • 1/2 cup red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 1 large lime, juiced
  • 1/4 teaspoon salt (or to taste)

Instructions

  1. Start by peeling and coring a fresh pineapple. Cut the fruit into very small, uniform cubes. Having small pieces ensures that you get a bit of every flavor in every single bite.
  2. Finely dice your red bell pepper and red onion. For the jalapeño, remember to remove the seeds and the white ribs if you prefer a milder salsa. Mince the cilantro leaves until you have about half a cup.
  3. Place the diced pineapple, bell pepper, onion, cilantro, and jalapeño into a large glass mixing bowl. Pour the fresh lime juice over the top and sprinkle with the salt.
  4. Use a large spoon to gently toss all the ingredients together until they are evenly coated in lime juice. Let the salsa sit for at least 10 to 15 minutes before serving to allow the juices to meld together.
